- Mix 2 cups pumpkin, 1 tsp. cinnamon, 1 tsp. pumpkin pie spice (or: 1/2 tsp. ginger, 1/4 tsp. nutmeg, 1/4 tsp. clove), 1/2 tsp. salt, and 60 large marshmallows in a large saucepan.
- Heat till melted together, then cool mixture in refrigerator.
- Crush 30 single graham crackers; mix with 3/4 cup melted butter and press into bottom of 9"x13" pan.
- Blend 2 cups Cool Whip into pumpkin mixture, then spread over the crust.

This is another easy treat I used to make now and then. Guess who gave the recipe to me! The only drawback was that it always seemed to leave permanent orange stains on whatever spoon I used to mix it (wood or plastic).
